We specialise in freshly made kebabs, Middle Eastern–style snack packs, Sub-continental foods such as biryanis (chicken, goat, beef, lamb), rich curries: Lamb shank, Chicken Bhuna, Beef Vindaloo, Mutton Curry and Lamb Rogan Josh and a wide variety of authentic vegetarian meals including falafel, palak paneer, daal, paneer, mix vegetable curries, and more. As our customer demand continues to grow, we are seeking skilled and dedicated staff under the NT DAMA program for the following roles: 1. Café and Restaurant Supervisor/ Store Supervisor (Casuarina Kebab & Biryani House / Kebab Karama) Salary: $ 65,000 – $75,000 Super Role Purpose To supervise daily front-of-house operations, maintain high customer service standards, support kitchen operations, and ensure the shop runs efficiently. Key Duties Supervise counter staff, kitchen assistants, and food prep team. Train new staff on customer service, food handling, and POS procedures. Manage daily operations including opening and closing routines. Handle customer enquiries, resolve complaints, and ensure a welcoming environment. Assist with preparing kebabs, snack packs, biryani servings, and curries during peak hours. Oversee cash handling, EFTPOS operations, daily sales reconciliation, and shift reports. Maintain stock levels of drinks, condiments, sauces, packaging, and disposables. Ensure shop cleanliness, equipment hygiene, and compliance with food safety laws. Coordinate rostering and shift allocation with management. Support promotions, specials, and community engagement activities. Requirements Minimum 1–2 years experience in hospitality supervision. Excellent communication and problem-solving skills. Experience working in a takeaway, kebab shop, or fast-casual environment preferred. Ability to multitask during busy periods. Strong customer service orientation. Qualifications Certificate in Hospitality or Leadership preferred. Food Safety Supervisor certificate desirable. 2. Café and Restaurant Manager/ Store Manager (Multi-Site: Casuarina & Karama) Salary: $65,000 – $75,000 Super Role Purpose To manage full operational responsibilities across two retail food outlets, ensuring profitability, staffing stability, high service standards, and compliance with NT regulations. Key Duties Oversee all operations at Casuarina Kebab & Biryani House and Kebab Karama. Lead staff recruitment, onboarding, ongoing training, and performance reviews. Develop staff rosters, manage shift coverage, approve leave, and ensure minimum staffing levels. Monitor daily sales, financial reporting, budgeting, and cost control. Maintain supplier relationships, negotiate pricing, and place orders for meats, spices, rice, vegetables, packaging, and beverages. Ensure all curries, biryanis, kebabs, and vegetarian dishes meet quality and consistency standards. Implement food safety, WHS compliance, and workplace policies as per NT legislation. Handle escalated customer concerns and maintain positive community relationships. Review stock levels, minimise wastage, and ensure FIFO storage methods. Manage marketing activities including meal deals, seasonal offers, loyalty incentives, and local promotions. Work closely with the business owner to support business growth and operational improvements. Requirements Minimum 2-3 years managerial experience in hospitality or food retail. Strong leadership skills with the ability to manage multi-site operations. Knowledge of Indian/Middle Eastern cuisine and fast-food workflows. Excellent interpersonal skills and a customer-focused mindset. Ability to work independently and handle high-pressure service times. Qualifications Diploma in Hospitality, Business, or Management OR equivalent experience (preferred) . Food Safety Supervisor certification preferred. 3. Ethnic Cook (Kebab, Biryani, Curry & Middle Eastern/Indian Cuisine) Salary: $65,000 – $75,000 Super (based on experience) Role Purpose To prepare high-quality ethnic dishes including kebabs, biryani, curries, and vegetarian specialty meals, ensuring consistency, authenticity, and adherence to food safety regulations. Key Duties Prepare and cook shawarma-style products. Cook a full range of biryanis: chicken, goat, beef, lamb, and special weekend biryanis. Prepare daily curry items: lamb shank curry, beef curry, goat curry, chicken curry, paneer curries, vegetarian curries, palak paneer, daal, chana masala, vegetable korma, etc. Manage marination, spice blending, base gravy preparation, and cooking to maintain authentic flavours. Monitor food quality, freshness, and consistency across all locations. Prepare snack packs, rice boxes, meal boxes, wraps, and combo meals during peak service periods. Maintain stock levels, monitor ingredient usage, and prepare daily/weekly order lists. Follow strict hygiene standards, temperature controls, and HACCP guidelines. Train junior kitchen assistants on ingredient preparation and safe working practices. Requirements Minimum 2 years’ experience in ethnic/Indian/Middle Eastern cooking. Ability to work in a fast-paced takeaway environment. Strong understanding of spices, biryani preparation, curry techniques, grilling, and marination. Knowledge of Australian food safety practices. Ability to work weekends and evenings when required. Qualifications Certificate III/IV in Commercial Cookery OR relevant experience (preferred). Food safety certificate desirable.
