Metro Master Meats is a family-owned butcher business with over 45 years of industry experience, specialising in traditional butchery and high-quality meat products. We source hormone-free, grass-fed beef and lamb from Victoria and Southern NSW and offer a wide range of traditional and gourmet meat products. We are currently seeking an experienced Butcher to join our team in Marrickville. Key Duties and Responsibilities: • Prepare meat for sale by deboning, trimming, cutting, slicing, mincing, and grinding meat to required specifications • Prepare value-added meat products, including crumbed, marinated, seasoned, and cured cuts • Select and process meat to produce smallgoods such as sausages and other processed meat products • Operate meat processing equipment, including mincers, grinders, mixers, slicers, and tenderisers • Prepare marinades, seasonings, and curing mixtures by blending spices, salt, and other ingredients • Operate sausage filling machines, smoking chambers, and cooking equipment • Ensure compliance with food safety, hygiene, and workplace health and safety standards • Advise customers on suitable meat cuts and recommended uses as required Skills and Experience Required: • Minimum of 2 years relevant work experience as a butcher • AQF Certificate III including at least two years of on-the-job training, or AQF Certificate IV • Proven experience in traditional butchery and meat preparation techniques • Ability to safely operate meat processing machinery • Strong understanding of food safety and hygiene requirements
