Description Join us on the journey We currently have a full-time opportunity available for a Head Chef to join the Spotless team located at Brisbane Immigration Detention Centre in Pinkenba. As a subcontractor to Secure Journeys, Spotless is responsible for preparing and serving culturally diverse, nutritious meals that contribute to the overall health and well-being of individuals within the centres. What you’ll do This role has a broad remit, with key responsibilities including: Design menus and manage the procurement of goods Oversee allergen management and special dietary requirements Lead the day-to-day management of chefs and front-of-house teams Assemble, prepare, and produce food requirements as directed by the Catering Manager, ensuring food safety, kitchen cleanliness, stock control, and adherence to all kitchen policies and procedures Ensure full compliance with the HACCP Food Safety Plan by monitoring food safety standards, maintaining hygiene in food preparation areas, and completing all Food Safety documentation accurately and on time Monitor and enforce food storage standards, including correct handling and rotation of stock using First In, First Out (FIFO) principles and maintaining appropriate holding temperatures for perishable items Ensure compliance with our Standards of Business Conduct and actively contribute to a culture of safety and continuous quality improvement. What you’ll bring Certificate III in Commercial Cookery, along with a Food Safety Supervisor Certificate Sound knowledge of menu planning and nutritional standards Comprehensive understanding of HACCP Food Safety requirements Experience in bulk catering environments, ideally within aged care, remote sites, or FIFO operations Strong written and verbal communication skills Excellent teamwork, interpersonal, and leadership capabilities Above all, you will demonstrate a strong work ethic, a positive attitude, and a commitment to delivering high-quality outcomes for Spotless and our client.
