Ammos Restaurant is seeking a highly skilled and motivated Head Chef to lead our kitchen team and deliver exceptional Mediterranean-inspired cuisine. The restaurant is in Hotel Brighton Le-Sands (by Oscars Group). Key Responsibilities Oversee all kitchen operations, ensuring high standards of food preparation, presentation, and quality. Lead, supervise, and mentor the kitchen brigade; conduct training and performance management to maintain a cohesive and skilled team. Develop and refine menus, including seasonal specials, ensuring dishes reflect the restaurant’s Mediterranean concept. Manage inventory, stock rotation, and ordering of supplies; maintain cost control and reduce wastage. Ensure compliance with food safety standards, HACCP requirements, and workplace health and safety regulations. Collaborate with management to plan functions, events, and menu changes. Monitor kitchen budgets, food costs, and labour costs to align with business expectations. Maintain strong communication between front-of-house and back-of-house to ensure smooth service delivery. Uphold a clean, organised, and efficient kitchen environment at all times. Skills & Experience Proven experience as a Head Chef or Senior Chef in a high-volume or premium-quality restaurant. Strong leadership, communication, and team-management capabilities. Excellent knowledge of Mediterranean cuisine and modern cooking techniques. Ability to work under pressure while maintaining consistently high standards. Understanding of stock control, ordering processes, and kitchen financial management.
