THE MONDAY GROUP is partnering with a major national Defence services provider to recruit a Hospitality & Catering Manager. This is a full-time leadership role overseeing the day-to-day operations of a large Defence mess facility - ensuring meal services, FOH operations, and functions run smoothly, safely, and to a consistently high standard. You’ll lead the FOH team, uphold strict compliance and safety frameworks, manage daily financial processes, and act as the key point of contact for Defence personnel. This role directly supports the wellbeing and operational readiness of those on base. Key Responsibilities: Oversee daily food service delivery, FOH operations, and mess presentation Lead, coach, roster, and performance-manage FOH staff Conduct and oversee food safety compliance, HACCP protocols, audits & reporting Manage financial processes including POS, meal pass reconciliation, bar stocktakes & forecasting Respond to customer feedback and ensure issues are investigated promptly Manage recruitment and onboarding for FOH team members Report facility damage, equipment faults, and safety incidents immediately Ensure all SHEQ standards are embedded and consistently met Prepare reports, data insights, and operational statistics as required Maintain accurate digital records including takings, EFTPOS reports, stock data & compliance inputs The Candidate: Experience supervising FOH/hospitality teams (2 years) Strong knowledge of food safety, HACCP, and compliance frameworks Confident, safety-led leader who drives accountability and continuous improvement RSA required; Food Safety Supervisor certificate advantageous Australian Citizen with ability to obtain Defence Security Clearance Full driver’s license and access to transport Salary & Benefits: Salary depending on experience Access to strong wellbeing initiatives, discounted health insurance & EAP Staff discounts across 450 retailers A genuine “safety-first” culture
