You’ll be working with some of Melbourne’s best seafood, ensuring each fillet meets the premium standards our venues are known for. You’ll be responsible for expertly preparing, portioning, and handling a wide range of seafood, maintaining consistency, quality, and efficiency every step of the way. In this role, you’ll: Fillet, portion, and prepare premium seafood with precision and care Maintain consistent size, yield, and presentation to brand standards Check seafood for freshness and quality, ensuring food safety and HACCP compliance Support daily operations — from stock control to storage and rotation Keep your workspace clean, organise,d and ready for service Work closely with chefs and production teams to deliver daily requirements About You: You take pride in your craft and know your way around a filleting knife. You’re detail-oriented, efficient, and comfortable in a fast-paced environment. You’ll bring: Proven experience in fish filleting or seafood preparation (hospitality or production) Strong knife skills and knowledge of seafood species Commitment to precision, quality, and presentation Sound understanding of food safety and hygiene (HACCP experience a plus) A reliable, organised, and team-focused attitude Required: Food Handling Certificate Preferred: Experience in seafood processing or kitchen production Why Join LK Hospitality?
