Major Duties & Responsibilities: Kitchen Leadership & Management: Oversee all daily kitchen operations, ensuring smooth and efficient service. Lead, train, motivate, and manage the entire BOH team, including line cooks, prep cooks, and dishwashers. Schedule staff, manage labor costs, and maintain a positive, collaborative, and high-energy work environment. Conduct regular performance reviews and provide constructive feedback. Culinary Excellence & Menu Development: Uphold and execute all recipes to the highest standards of authenticity, quality, and consistency. Develop and innovate new menu items, specials, and seasonal offerings that align with the Calaveras brand. Manage food costing, portion control, and inventory to maintain profitability without compromising quality. Ensure all dishes are plated beautifully and presented according to established guidelines. Operations & Safety: Maintain strict compliance with all health, safety, and sanitation regulations (ServSafe certified standards). Manage inventory, including ordering, receiving, and storing all food and supplies. Oversee the proper maintenance and operation of all kitchen equipment. Implement and manage kitchen systems for prep lists, waste logs, and inventory counts. Requirements: Proven experience (1-2 years) as Chef/Chef de Partie in a high-volume, full-service restaurant. Mexican cuisine experience is a must. Extensive knowledge of traditional and modern Mexican cooking techniques, ingredients, and flavors. Strong leadership, communication, and interpersonal skills. Ability to thrive under pressure in a fast-paced environment. Proficiency in inventory management, food costing, and kitchen software. Current Food Handler's/ServSafe Certification.
