Summary: We are seeking a motivated and detail-oriented Junior Production Chef to join our team at Melco Foods. In this role, you will assist in preparing, testing, and producing high-quality food products in a manufacturing environment. This role works inside of R&D Kitchen. The role works closely with the Company’s Research & Development team, Melco Foods production team, and Quality Assurance team to ensure our products align with company standards and meet customer expectations. Key Responsibilities: According to the selected menus and ingredients, assist in the preparation and production of food products according to company recipes and standards. Measure, mix, and assemble ingredients accurately to meet production schedules. Ensure consistency in flavour, texture, and display/appearance of food products. Operate and maintain kitchen equipment and machinery in a safe and efficient manner. Food Safety and HACCP Compliance: Follow all food safety protocols, including personal hygiene, cross-contamination prevention, and cleaning procedures. Ensure all ingredients and finished products are stored and handled in compliance with HACCP standards. Monitor critical control points (CCPs) during production, documenting findings accurately. Conduct temperature checks and other safety tests to ensure compliance with food safety regulations. Report any potential food safety issues to supervisors immediately. Knowledge of cooking techniques required for specific menu items as the role supports our R&D team to test new recipes / products. Perform quality checks throughout the production process to identify and address any issues. Support in inventory management, including stock rotation and replenishment. Maintain a clean and organized workspace, ensuring compliance with health, safety, and sanitation regulations. Communicate effectively with team members and supervisors to ensure smooth operations. Qualifications: Education: Certificate or diploma in culinary arts, food production, or a related field. Experience: Previous experience in a kitchen or food production environment is preferred. Solid understanding of food preparation and production techniques. Familiarity with portion control and recipe consistency. Skills: Strong attention to detail and ability to follow recipes accurately. Knowledge of food safety and hygiene practices. Good organizational and time management skills. Ability to work effectively in a fast-paced team environment. Physical Requirements: Ability to stand for extended periods and lift items up to 20kg.
