Reporting to the Group General Manager & Owner, we are seeking an experienced, creative, and self-driven Bar Manager to join our leadership team and elevate our beverage program to the next level. The Role We are seeking a Bar Manager who is hands-on, team-focused, and passionate about all things hospitality. In this role, you will lead the beverage program—designing and curating our cocktail list, showcasing exceptional Italian wines, and ensuring every guest enjoys an unforgettable drinking and dining experience. You will also support the Restaurant Manager as required, stepping into a leadership role on the floor when needed. What You’ll Be Doing Acting as the face of the bar, driving creativity and excellence Designing and writing an industry-leading cocktail list that reflects both innovation and Italian influence Overseeing beverage service to ensure a seamless, high-quality guest experience Leading, mentoring, and training the bar and front-of-house team on beverage knowledge and service standards Managing inventory, cost control, and supplier relationships for the beverage program Showcasing excellent wine knowledge, with a strong focus on Italian wines Ensuring compliance with health, safety, and liquor licensing regulations Deputising for the Restaurant Manager during service as required What We're Looking For This role is not suitable for entry-level applicants Minimum 2–3 years of leadership experience in a high-end bar or hospitality venue Industry-leading cocktail knowledge and mixology skills Proven ability to design and write cocktail menus Excellent wine knowledge; Italian wine expertise is essential WSET qualification is highly regarded but not essential A hands-on leader who can inspire and motivate a team A passion for creating unforgettable guest experiences Strong organisational and problem-solving skills Familiarity with bar management software and POS systems Deep love for hospitality, with flexibility to support overall restaurant operations Position Details Permanent full-time position – this is a salaried role operating on a 5-day roster across 7 days. 45 hours per week Sponsorship may be available for the right candidate How to Apply Apply via SEEK by submitting your resume and a cover letter outlining why you are applying for the role and your suitability for the position, including your relevant experience.
