The Opportunity We are on the lookout for an Assistant Head Sommelier to support and evolve our beverage program. This role is key to ensuring a world-class guest experience and leading the team with a focus on wine excellence, product knowledge, and a commercial mindset. The Role Deliver an exceptional wine and beverage experience aligned with the Loulou brand. Lead service teams in providing polished, knowledgeable and warm hospitality. Assist in the curation and evolution of the wine list, championing French wines alongside international highlights. Monitor and manage wine stock, costs and supplier relationships. Build meaningful relationships with guests and help cultivate a strong base of regular clientele. Support a culture of learning, refinement and service excellence across the floor team. Remain across global and local wine trends and share knowledge with the team to continually enhance guest experience. WSET, CMS or equivalent certification preferred. Deep understanding of French wine regions and varietals. Strong leadership, communication and service skills. Commercial acumen and understanding of cost control. Must have full working rights in Australia.
