About the Role Based at our Bairnsdale site, the Development Baker plays a key role in our Innovation Team, turning creative ideas into delicious, scalable products for market launch. In this hands-on, collaborative role, reporting to the Master Baker, your duties and responsibilities will include but not be limited to; Develop and commercialise new bakery products through the Stage & Gate innovation process. Create and refine recipes that balance taste, texture, quality, and cost efficiency. Partner with operations, procurement, and QA teams to ensure smooth product launches and cost-optimised formulations. Coordinate and oversee product trials, first production runs, and technical validations. Ensure food safety and hygiene standards are upheld to the highest level (HACCP, FSANZ, etc.). Support troubleshooting, process improvements, and continuous innovation across the bakery category. Represent Patties’ passion for quality and creativity during site visits and product tastings. You’ll be instrumental in bringing our next generation of baked favourites to life; from concept to commercial success. About You You’re a hands-on baker who thrives in an environment that values creativity, collaboration, and continuous improvement. You combine a love of baking with technical expertise and a strong understanding of food manufacturing. You’ll bring: 3–5 years’ commercial or industrial baking experience with solid knowledge of dough handling, proofing, and baking processes. Demonstrated experience in recipe development and product innovation. A practical understanding of food safety systems (HACCP, allergen control, hygiene standards). Strong analytical, problem-solving, and attention-to-detail skills. Excellent communication and teamwork, with the ability to train and support production staff.
