Position Summary We are seeking a skilled and passionate Chef to join our professional kitchen team. The successful candidate will be responsible for planning, preparing, and executing high-quality dishes while maintaining Vivace’s culinary standards. This role involves managing kitchen operations, mentoring junior staff, developing seasonal menus, and ensuring compliance with all food safety and hygiene regulations. This position is classified under ANZSCO 351311 (Chef) and requires advanced culinary skills, leadership capability, and a commitment to maintaining Vivace’s reputation for excellence. Key Responsibilities Plan, prepare, and cook dishes in accordance with Vivace’s fine dining standards. Develop and update menus in collaboration with the Head Chef, incorporating seasonal and local produce. Execute dishes across à la carte, tasting, and event menus with precision and consistency. Monitor quality, taste, portion control, and presentation of all dishes leaving the kitchen. Supervise, train, and mentor junior chefs, cooks, and apprentices. Oversee daily kitchen operations, ensuring a smooth workflow during peak service periods. Manage inventory, monitor stock levels, and order supplies to meet service demands. Control food costs, minimise waste, and ensure efficient use of ingredients. Maintain a clean, organised, and safe kitchen environment in compliance with HACCP and food safety standards. Ensure all kitchen staff adhere to hygiene and occupational health and safety procedures. Liaise with front-of-house staff to ensure timely and coordinated service. Assist with menu tastings, new dish development, and seasonal updates. Uphold Vivace’s culinary philosophy of quality, authenticity, and innovation. What We’re Looking For Certificate IV in Commercial Cookery or an equivalent formal qualification. Minimum of 1 year experience as a Chef in a full-service restaurant or fine dining establishment. Proven expertise in Italian, Mediterranean, or Modern Australian cuisine. Strong leadership, time management, and communication skills. Demonstrated ability to perform under pressure in a high-volume environment. In-depth understanding of HACCP, food safety, and kitchen hygiene standards. Ability to develop new dishes, maintain consistency, and adapt to seasonal changes. Flexibility to work evenings, weekends, and public holidays as required.
