As our Production Chef Manager (PM Shift), you'll lead a crew of around 20 to deliver every product on time, to specification, and within budget. Your success is measured by clear performance outcomes: 98 % Quality, Recipe Adherence, Labour on Budget, Team Stability and Engagement. What You'll Oversee The PM shift prepares next-day catering and retail items salad bowls, sandwiches/wraps, breakfast pods, grazing platters, bakery and dessert lines. Your focus: plan, coordinate, and deliver production through disciplined systems that maintain quality and efficiency every night. Your culinary background will be used for technical problem-solving, quality control, and ensuring the production feasibility of new menu items from our food-development team covering scalability, transport, shelf-life, and presentation standards. You'll spend roughly 70 % leading, training, and managing quality, and 30 % hands-on to guide, support, and uphold standards alongside your team. What Success Looks Like By 3 Months Fully own the PM shift output, quality, safety, and labour efficiency. Develop two capable Team Leaders. By 6 Months Sustain 98 % across recipe adherence, labour efficiency, and quality metrics. Build a dependable 2IC and smooth succession plan. By 12 Months Maintain 98 % recipe adherence and zero food-safety non-conformances. Lead a stable crew with multiple long-term Team Leaders. What You'll Bring 2 years leading 15-20 staff in high-volume food production or catering. Professional culinary background (Head Chef, Sous Chef, or equivalent production leadership). Strong technical knowledge of mass-production methods, presentation, yield, shelf-life, and transport standards. Proven record of running structured, repeatable systems that achieve consistent results. Experience coaching and developing casual staff into dependable performers. Solid rostering, labour, and quality-control skills. HACCP food-safety expertise. Hands-on, structured leader who thrives in a high-volume, organised environment.
