Merlo is expanding its artisan bakery in Bowen Hills, and we’re on the hunt for a qualified Pastry Chef to lead our patisserie section at Milano Bakehouse. Think decadent cookies, indulgent brownies, and show-stopping cakes, crafted fresh each day to pair perfectly with our award-winning coffee.
About the Role
You’ll take ownership of the patisserie program, working independently to deliver high-quality, consistent products that showcase your creativity and expertise. Reporting into our Head Baker, you’ll be the go-to for all things sweet.
What You’ll Do
Produce a range of cakes, brownies, cookies, and other patisserie items from scratch
Work autonomously to manage your production schedule and daily targets
Ensure every product looks as good as it tastes, with an eye for finishing and presentation
Maintain strict food safety and hygiene standards
Collaborate with the bakery team to refine recipes and contribute to new product ideas
