Albert & Moore Cafe is a family run business that has been serving in Freshwater for 11 years with healthy Breakfast, lunch & beverages. About the role On behalf of our client, we are currently seeking a dedicated, self-driven and highly passionate Cook to be part of their growing team. You are responsible for the cooking, preparation and maintaining food standards for food service for a café serving breakfast and lunch daily. This position is also to support the Head Chef and assist in daily cleaning, preparation and stock control and delivery and storage of food and beverage. Duties and Responsibilities Quality Control of Food: Ensure all dishes prepared meet the high-quality standards of the cafe. This includes checking the freshness of ingredients, making sure dishes are prepared correctly, and that the final presentation aligns with menu descriptions. Constant Checking of Temperatures: Regularly monitor and record temperatures of ovens, grills, and other cooking equipment to ensure they are operating at the correct settings necessary for different foods, such as ensuring proper heat levels for perfectly poached eggs and adequately crispy bacon. Preparing and Cooking Food: Prepare a variety of dishes from the menu, such as Dukkah Scrambled Eggs, Smashed Avocado, and various bowls and burgers. This involves following specific recipes and timing dishes to coincide with cafe service hours. Seasoning Food During Cooking: Adjust seasoning during the cooking process to enhance the flavours of the dishes, considering customer preferences and dietary requirements. Examples include adjusting the level of spices in Buddha and Superfood salads and ensuring the proper balance of sauces like hollandaise for Eggs Benedict. Portioning Food, placing it on Plates, and adding gravies, sauces, and garnishes: Plate dishes according to the cafe's presentation standards, adding the correct garnishes such as beetroot hummus for the Lentil & Vege Burger Bowl, and drizzling honey on Dukkah Scrambled Eggs. Storing Food in Temperature-Controlled Facilities: Properly store all ingredients and prepared foods in temperature-controlled environments to maintain freshness and prevent spoilage. This includes organizing the fridge and freezer space effectively. Preparing Food to Meet Special Dietary Requirements: Adapt menu items for special diets, like making gluten-free substitutions or accommodating vegan and dairy-free options, ensuring all dietary needs are met without cross-contamination. May Plan Menus and Estimate Food Requirements: Assist in planning seasonal menus and estimating food requirements based on cafe trends and customer feedback. This might include selecting featured items or specials based on ingredient availability and popularity. May Train Other Kitchen Staff and Apprentices: Provide training and guidance to new kitchen staff and apprentices, teaching them the cafe's cooking techniques, plating standards, and kitchen safety protocols. Maintain Section Clean and Organized: Keep the kitchen area clean and organized, ensuring all tools and equipment are in their designated places and that the cooking and preparation areas are sanitized according to health and safety regulations.
