About Employer A renowned Japanese fine dining restaurant located in Brisbane is seeking a chef with experience in preparing authentic Japanese cuisine. About The Role As a Chef , you will work closely with the Executive Chef and senior kitchen team to assist in the preparation and presentation of high-quality Japanese dishes. This role offers hands-on experience in a professional fine dining environment, allowing you to develop your culinary skills while upholding the highest standards of cleanliness, safety, and kitchen hygiene. You will also gain valuable insights into kitchen operations, ingredient handling, and authentic Japanese cooking techniques. The duties of a Chef include (not limited to): Develop quality menu plans and coordinate the design, planning and costing of menus. Passionate about Japanese culture and cuisine Liaise with external representatives and suppliers to ensure the correct and timely delivery of produce, supplies and equipment. Prepare and cook dishes on the menu in accordance with the Executive chef’s instructions Weigh, measure, and mix ingredients according to recipes to ensure minimal food wastage Regulate the temperature of ovens, broilers, grills and other cooking equipment, including storing food in temperature-controlled facilities Substitute for or assist other kitchen staff during peak season Ensure compliance with company OH&S and other policies Ensure that cool rooms, freezers, dry stores and back of house Including waste areas are maintained and monitored daily Ensure hygiene and cleanliness of equipment and all kitchen reflective areas including garbage areas and comply with occupational health and safety regulations Ensure that month-end stock takes of food stock and seasonal stock takes of ceramic wares &utensils are done Work closely with the Banqueting, Operations, and Sales/Coordination team for the delivery of successful events if necessary Coordinate and assist with stocktake monitoring and reporting. Liaise with external representatives and suppliers in a professional and timely manner Overseeing the ordering and control of stock levels.
