Key Responsibilities Plan and organise preparation and cooking of menu items, focusing on a wide range of authentic Chinese dishes including Peking Duck, seafood specialties, stir‑fries, dumplings, noodles, and more. Create menus and develop new, culturally authentic recipes. Prepare, season, and cook food to uphold consistency in taste, quality, and presentation. Monitor food quality at every stage—from preparation to plating—ensuring high standards. Estimate food and labour costs, manage kitchen budgets, and optimise resource use. Order and manage kitchen supplies, maintaining optimal inventory. Supervise, train, and mentor junior kitchen staff and apprentices. Demonstrate cooking techniques and advise staff on methods and procedures. Enforce workplace health, safety, and hygiene regulations, maintaining a clean and organised kitchen. Coordinate kitchen operations efficiently and manage workflows during peak dine‑in service times, also supporting takeaway orders as required. Preserve or freeze foods as required to maintain quality and reduce waste. What We Are Looking For Minimum of 1 year experience in a chef role, preferably in Chinese or Asian cuisine. Proficiency in menu planning, recipe development, and preparing a variety of traditional and authentic Chinese dishes. Strong quality control skills to maintain flavour, presentation, and food safety standards. Sound budgeting and inventory management abilities. Proven ability to supervise, train, and guide kitchen staff with a collaborative approach. Deep understanding and application of health, safety, and hygiene practices in line with Australian standards. Good communication, problem‑solving, and interpersonal skills.
